Easy Caprese SaladBy now you all know how I like recipes. Easy. The same way I like just about everything. Nothing is worse than attempting to cook in the evening heat during a hot summer. It was 100+ degrees here yesterday, and ain’t no one got time for that. So when I got home from a longgggggg day in the office, I knew I was going to make myself this easy caprese salad. And not only because I love saying, “Easy Caprese.” Seriously. Does anything roll off the tongue better?

Easy Caprese Salad Ingredients

My mom fixed it for me when she was visiting about a month ago. I’ve been obsessed ever since. I’ve yet to find something as refreshing on a hot summer day. Except ice cream. Or a cool adult beverage. With a lemon slice. More on that later.

Easy Caprese Salad

Start with grape tomatoes, mozzarella balls, basil, and balsamic vinaigrette dressing. Chop up the basil, toss it in a bowl with the balls and tomatoes, and pour the dressing over. When you’ve tossed the ingredients together, sprinkle a little salt over the dish to bring out the natural flavors (mom’s idea: she’s brilliant). When I make this dish for myself, I always cut the tomatoes in half. Nothing is worse than trying to pick up a tomato with a fork. Especially if you’re wearing white. Amiright?

    Yum, that salad looks delicious! I always cut tomatoes in half when I’m making a salad, sandwich, etc. It makes it so much easier (and less messy) to eat. 🙂

    This looks amazing! I just had the best heirloom caprese salad at a local restaurant in Long Beach, CA and I’m dying to make one of my own. So great for summer! I can’t believe it’s over 100 there, eek!

      Oh my gosh the salt is the trick I swear! I wouldn’t have thought of it but my mom mentioned it and it brought the flavors out perfectly!! I am jealous of your garden!

      Oh me too! I’m from Wisconsin, we eat cheese with everything! Then I married my husband, and he HATES cheese! It is horrible! 🙂

This is NOT a post to bash moms that are happy the This is NOT a post to bash moms that are happy their kids are going back to school. My neighbors and I commiserate all summer long about how long the days are, how frustrating the kids can be, how much they’re fighting, etc. 

But my days are always like that, and even though it’s exhausting and overwhelming at times, I wouldn’t trade it for the world. Even if I only have ONE moment like this a day, it’s one moment a day I could miss out on if they were in a traditional school. 

So here’s to whatever choice you are making in regards to your kids education. What’s best for YOU is most important. And what’s best for us is this.

The difference? This isn’t just a container of slime

My girls were completely entertained, and I loved watching them create, experiment, and laugh together. It feels like pure fun for the kids, but there’s actually some pretty cool science and engineering behind it all, plus Mark Rober walks you through even more with the QR code inside the kit.

This weekend at church, my daughter got to light the candles for the first time. At the end of the service, when she went up on her own to extinguish them, proud tears dropped from my eyes. And as I looked around at others, I noticed I wasn’t the only one. 

If you had asked me in my early to mid twenties, I wouldn’t have imagined how much this community, this faith, and these little traditions would come to mean to our family. There was a season of my life, long before I became a mom, where I drifted away from actively going to church. Now, getting to watch my girls grow up surrounded by faith, love, and a church family who knows them and celebrates them feels like such a gift.
Hot take: We’ve convinced ourselves kids need bigg Hot take: We’ve convinced ourselves kids need bigger backyards, when what they really need is neighborhood kids.

I used to think about more square footage, more land, more privacy. Now? I’d rather my girls have friends they can run to than an acre they have to play on alone.

A bigger house isn’t always a better childhood. For us, built-in community has been worth more than an extra bedroom ever could be.

I know this won’t be everyone’s opinion, but I think for elementary-aged kids, having friends next door is more valuable than having a huge yard. Anyone else change their mind about what “dream home” actually means?

Before anyone comes at me, I’m not talking about spending thousands of dollars. I’m talking about picking a theme, hanging the decorations, baking the cake (or buying it and decorating at home), planning the games, and making your kid feel like the most important person in the world for one day.

That’s the stuff they’ll remember.

You don’t need a huge budget to make childhood feel special. Agree or disagree?

Listen. Social media tends to make traveling with children look glamorous, and the truth is, it usually isn’t. Are some kids professional travelers? Of course. But reality is that there’s always pitfalls and unexpected turbulence that you just have to mentally prepare for before you travel. And in the end? I promise you, it’s worth all the hassle.
