Easy White Chicken Chili // Easy RecipeI am by no means a good cook. I know I can cook, but I prefer the easiest of recipes, the most basics of food, and I tend to stick to chicken. I’m from the Midwest, can you blame me? At least I don’t make tater-tot casserole on a regular basis. Or ever. Mainly because I have no idea how to do it, not because it looks like the most disgusting dish you’ve ever seen (to be fair, looks can be deceiving, because it actually is pretty damn good).

Growing up, I ate everything and anything that my mom put on a plate in front of me. That is, as long as she also put a plate in front of my imaginary friend Jessica as well. And believe me, Jessica was ALWAYS hungry, so there better be a full plate of food at her seat. There was one food that Jessica and I both hated (pardon my french): Shit on a Shingle. If you’ve ever been unfortunate enough to have heard of this disgusting dish, then you feel my pain. Don’t believe me? Just Google it. The one time my mom tried to make us eat Shit on a Shingle (I mean, couldn’t they have called it something a little more appealing?), I refused to eat it. I sat at the dinner table until midnight (probably 8pm), and had to go to bed without dinner. Don’t feel sad for me, Jessica had to go to bed without dinner too.

Easy White Chicken Chili RecipeSo why did I tell you that little child-abuse story? Because I learned a life lesson. If I ever procreate, my children will eat everything I make. I will name my dishes things like, “Amazing Bubbles from Heaven” (brussel sprouts) or “Rainbows and Unicorns” (meatloaf). How could they refuse?

I will also feed them my famous White-Chicken Chili. Only I won’t need to call it anything other than what it is, because it’s already fabulous. Not only is it ridiculously amazing, it’s also really easy. Which is why they will love it as much as I do.

    YUM! I am with you, I love the easiest recipes and believe that they often taste the best (and are the healthiest!) Buying a crockpot was like the best thing that has ever happened to me. Can’t wait to try this recipe!

This weekend at church, my daughter got to light the candles for the first time. At the end of the service, when she went up on her own to extinguish them, proud tears dropped from my eyes. And as I looked around at others, I noticed I wasn’t the only one. 

If you had asked me in my early to mid twenties, I wouldn’t have imagined how much this community, this faith, and these little traditions would come to mean to our family. There was a season of my life, long before I became a mom, where I drifted away from actively going to church. Now, getting to watch my girls grow up surrounded by faith, love, and a church family who knows them and celebrates them feels like such a gift.

I used to think about more square footage, more land, more privacy. Now? I’d rather my girls have friends they can run to than an acre they have to play on alone.

A bigger house isn’t always a better childhood. For us, built-in community has been worth more than an extra bedroom ever could be.

I know this won’t be everyone’s opinion, but I think for elementary-aged kids, having friends next door is more valuable than having a huge yard. Anyone else change their mind about what “dream home” actually means?

Before anyone comes at me, I’m not talking about spending thousands of dollars. I’m talking about picking a theme, hanging the decorations, baking the cake (or buying it and decorating at home), planning the games, and making your kid feel like the most important person in the world for one day.

That’s the stuff they’ll remember.

Listen. Social media tends to make traveling with children look glamorous, and the truth is, it usually isn’t. Are some kids professional travelers? Of course. But reality is that there’s always pitfalls and unexpected turbulence that you just have to mentally prepare for before you travel. And in the end? I promise you, it’s worth all the hassle.

Not so they grow up thinking one place is “better” than another — but so they grow up curious, grateful, and grounded. And the more of the world we see, the more thankful I become for home, for the freedoms we have, and for the life we get to build together.

Social media makes it feel like every trip requires new outfits, a new summer closet, a new date-night dress…but honestly? It doesn’t.

I’m willing to bet you already have plenty of great options hanging in your closet. And instead of spending a bunch of money on clothes you’ll probably only wear once, maybe it’s enough to just wear what you already love.

The sticky fingerprints will wash away, the car seats will come out, bedtime routines will end, and the house that once felt so loud will get quieter little by little.

It’s strange how the things that exhaust you in the moment become the very things you ache for later. 🤍
